VEGAN SPICE CAKE. 🍰🍰🍰🍰🍰🍰🍰🍰🍰🍰🍰🍰1 cup copha
2 cups (500ml) water
2 cups raisins
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1/2 teaspoon ground cloves
2 cups (440g) white sugar
3 cups (375g) plain flour
1 teaspoon bicarb soda
Preparation method

Prep: 20 minutes | Cook: 45 minutes
1.
In a saucepan combine the copha, water, raisins, cinnamon, nutmeg, allspice, cloves and sugar. Simmer for 10 minutes. Remove from heat and let stand until cool.
2.
Preheat oven to 180 degrees C. Grease one 20x30cm baking dish.
3.
Stir the flour and bicarb soda into the cooled raisin mixture and mix until just combined. Pour batter into the prepared pan.
4.

HOME MADE EASY LEMONADE. 

Everybody knows how to make lemonade, right? Squeeze some lemons, add sugar and water. But how to make lemonade so that it tastes right everytime? Here’s a surefire method.

Remember the starting proportions – 1 cup of sugar, 1 cup of water, 1 cup of lemon juice.

(This ratio makes a pretty sweet lemonade. Reduce the amount of sugar if you want your lemonade less sweet or if you are using Meyer lemons which are naturally sweeter than standard lemons.)

The secret to perfect lemonade is to start by making sugar syrup, also known as “simple syrup”. Dissolving the sugar in hot water effectively disperses the sugar in the lemonade, instead of having the sugar sink to the bottom.

Prep: 10 minutesYield: Serves 6.

INGREDIENTS
1 cup raw sugar (can reduce to 3/4 cup)
1 cup water (for the simple syrup)
1 cup lemon juice
3 to 4 cups cold water (to dilute)

METHOD
1 Make simple syrup by heating the sugar and water in a small saucepan until the sugar is dissolved completely.

2 While the sugar is dissolving, use a juicer to extract the juice from 4 to 6 lemons, enough for one cup of juice.

3 Add the juice and the sugar water to a pitcher. Add 3 to 4 cups of cold water, more or less to the desired strength. Refrigerate 30 to 40 minutes. If the lemonade is a little sweet for your taste, add a little more straight lemon juice to it.

VEGAN YUMMY FOOD. Recipe for spicy vegan zucchini and tomato stew with garlic and mint

If you love chickpeas, add those to turn this into a heartier vegan main dish. Serves 4.
Ingredients
2 tsp olive oil
1 medium onion, cut into 1-inch chunks
1 enormous zucchini, cubed (6 cups of cubes)
2 cloves garlic, minced
1/2 tsp ground cinnamon
1/4 tsp ground cumin
1/4 tsp turmeric
1/4 to 1/2 tsp cayenne pepper, to taste
2 cups cubed fresh tomatoes, seeded (do not peel), or 1 14-oz can chopped tomatoes
1/2 to 1 tsp agave nectar, to taste
Kosher salt, to taste
1 tsp fresh mint leaves, or 1/2 tsp dried mint

Directions
In a small (4-quart) tall-sided sauce pan, heat the oil over medium heat. Add the onions and zucchini, and cook, stirring frequently, for 3-4 minutes, until the onions are translucent and the zucchini is slightly softened.
Stir in the garlic, cinnamon, cumin, cayenne and turmeric, and cook for 2 minutes.
Then, add the tomato, and stir well. Reduce the heat to simmer, and cook, uncovered, stirring occasionally, for 20 minutes. Taste, and add agave nectar and salt, along with the mint. Continue cooking, uncovered, for 15-20 minutes, until the liquid has reduced by half.

Serve hot or at room temperature, over brown or white rice. Or, cool completely, and refrigerate. Like all stews, this one tastes even better the second day.
